  4. Select your device when it appears on your computer. Find out what to do if your device is unresponsive or won't turn on. Or get help if your device doesn’t appear on your computer.
  5. Click Restore [device]. If you’re signed in to Find My, you need to sign out before you can click Restore.
  6. Click Restore again to confirm. Your computer erases your device and installs the latest iOS, iPadOS or iPod software.
  7. After your device has been restored to its factory settings, it will restart. Now you can set it up as new.

If you can't access a computer

If you can't access a computer and your device still works, you can erase and restore your device without a computer.

Before I updated to MacOS Catalina I deleted all of my old backups by accident, so I have no idea what it is trying to restore to. I don't use iCloud either for backups.

I used other apps to get all of the important things off of my phone to see what happens when I do click 'Restore iPhone' but nothing happened. Even though my Mac is seeing my iPhone it won't connect to it. Please help me!! The picture below is what message I am getting in the Finder.
